&lt;strong&gt;Yeast-free pizza base&lt;/strong&gt;

3 cups flour (organic plain wheat flour or white spelt flour is good)
1 teaspoon baking powder
1 teaspoon dried thyme (not strictly necessary, but adds a great flavour hit)
3/4 cup water (or milk, or rice/oat/soy milk of choice)

Simply mix the dry ingredients in a large bowl, make a well in the centre and mix in the water (or milk) until it is well absorbed. It should make a soft but not too sticky dough. Add a little more flour if needed, in very small quantities at a time. Knead for a minute or so then divide into two balls. Roll each one out into a circle no more than 1/4 inch thick. Makes two bases.

The pizza base can then be used with a sauce and toppings of choice, and cooked in a pizza maker, on a pizza stone in the oven, or even in a large frying pan. If you want to really load up with toppings, make the base a bit thicker and cook it a bit longer on slightly lower heat.
